You don’t need a hundred recipes. You need two reliable structures you can repeat with whatever you have.
A good mocktail isn’t “just juice.” It’s built like a real cocktail: balance, texture, bitterness, aroma. The difference is simply that we swap the alcohol for smart 0% bases — and the structure stays the same. Here are two proven builds you can use anytime.
The "Spirit-Forward" Mocktail (stirred)
Vibe: slow, complex, “cocktail-bar” energy — without the alcohol.
How to build:
1½ oz (45 ml) NA Dry Gin
1 oz (30 ml) NA Amaro
¾ oz (22 ml) NA Sweet Vermouth
2–3 dashes aromatic bitters
- Method: stir with ice in a mixing glass until very cold → strain over a large cube.
Pro tip: add a matching cocktail spray as a finish — it adds an incredible aroma and deepens the whole experience.
Our NA Spirit forward version
1½ oz (45 ml) Statera NA Dry Gin
1 oz (30 ml) NOA NA Sicilian Amaro
¾ oz (22 ml) NOA NA Sweet Vermouth
+ 2–3 dashes Angostura bitters
1 spritz of Essentia mandarin leaves spray
The Light Highball Mocktail (built in glass)
Vibe: fresh, easy, weeknight-friendly.
How to build:
1.5 oz (45 ml) non-alcoholic spirit (or NA aperitif)
0.5 oz (15 ml) syrup
0.5 oz (15 ml) fresh lemon juice (or lime)
Top with 3–5 oz (90–150 ml) soda / sparkling water
Ice (fill the glass fully)
Method
Add ice to the top (this is key for sparkle + dilution control).
Add NA spirit + syrup + lemon.
Quick stir once.
Top with soda.
Gentle lift with barspoon once.
Pro tip: garnish with a dried citrus wheel, clipped to the rim (it looks bar-level and adds a subtle citrus aroma).
Our Light Highball Version
1.5 oz (45 ml) HP Juniper NA tequila
0.5 oz (15 ml) Prosyro ginger syrup
0.5 oz (15 ml) fresh lime juice
Top with 3–5 oz (90–150 ml) sparkling water
