The Gyuto Swedish Steel Damascus Washiji 210 mm (8.3") blends traditional Japanese craftsmanship with outstanding modern performance. Its gyuto profile is versatile and intuitive, delivering precise, effortless cuts through meat, fish, and vegetables—ideal both for those discovering Japanese knives and for seasoned cooks seeking reliability. Forged from Swedish Sandvik 19C27 steel (63 HRC), the blade provides long-lasting sharpness, strong corrosion resistance, and remains easy to resharpen despite its hardness. The san-mai construction reinforces the core and improves durability, while the hand-hammered Washiji finish reduces food sticking and highlights the elegant damascus layers beneath. The magnolia wood Wa handle, paired with a buffalo horn ferrule, offers a comfortable, well-balanced grip suitable for both right- and left-handed users.
