How to choose wine accessories
To keep an opened bottle of still wine, a vacuum pump with stoppers removes the air; for sparkling wine, a Champagne stopper holds the pressure instead. Can I use a vacuum pump on sparkling wine?
No. Use a Champagne stopper: a pump would draw out the bubbles.
How do I open Champagne with a sabre?
Chill the bottle well, remove the foil and cage, then slide the sabre firmly along the seam toward the lip. Always point the bottle away from people.
