The story

“Our lab with pretzels”

Bar Crocodile was born in the Alambika Alkademie, a multipurpose space with a bar licence that has hosted classes, events, collaborations and short-lived concepts since 2019. Crocodile is its new, permanent iteration. Well, as permanent as a lab can be.

Two worlds meet here. On one side, Max Coubès’s simple, human take on hospitality, far from the race for medals and trends. On the other, Alambika’s testing ground: glassware, tools, ingredients, techniques and prototypes used for real, night after night.

We test. We observe. We improve. And we start again.

No sacred cows

Anything can be questioned. Like a crocodile renewing its scales, the bar keeps evolving. The principles, though, don’t change:

  • Lightness
  • Hospitality
  • Quality
  • Curiosity

No kitchen, free snacks, and you’re welcome to bring your own food… as long as it doesn’t stink.

The founders

Two paths, one curiosity for what’s in the glass

Le Crocodile was imagined by Jean-Sébastien Michel, founder of Alambika, and head bartender Max Coubès.

Jean-Sébastien Michel

An entrepreneur and product designer, he founded Alambika in Montréal in 2011, when Québec’s craft cocktail culture was just emerging.

Through Alambika and Jesemi, he finds, designs and distributes products that improve the experience around a glass. He has also long photographed Montréal’s cocktail scene.

Max Coubès

A well-known figure in Québec mixology, originally from the south of France, he champions authentic flavours and the pleasure of drinking better.

He has his own establishment, writes books, collaborates with distilleries and agencies, and designs the graphics for his projects. He is a brand ambassador for NOA.
