Santoku means "the 3 virtues" (slicing, dicing, mincing) and stands for this knife's high versatility. It is the perfect multi-purpose knife for vegetables, meat and fish. This great universal tool isn't as intimidating as a large chef knife and therefore perfectly suited to initiate you to the great world of Japanese knives.
Due to perfect weight distribution between blade and handle, the handling of the knife is ergonomic and optimal.
As with most Masakage knives, the heel of the blade is rounded inward to allow a more comfortable use of the pinch grip.
The heart of the blade is made of the incredible resilient R2 powdered steel.
The Saji R2 Santoku 165mm knife is made by Takeshi Saji, a third-generation blacksmith working in Takefu. This japanese city is known for the making of quality knives for the last 700 years. Santoku knifes are the perfect all-purpose knife one can own; it slices, cut and chop vedgetables, meats and fishes.
All knives from Masakage are handmade by master blacksmiths of Takefu's village and hand sharpened by one of Japan's best knife sharpeners, Takayuki Shibata san. When these knives come out of their box, they have an amazing sharpness and will stay sharp for an extremely long time due to Shibata san's masterful technique.
