This is R. Murphy's uncomparable bar knife.
It was designed in collaboration with Award winning bartender-proprietor Jackson Cannon, of The Hawthorne of Boston. The knife's roots delve straight into the footwear industry. It is in fact modeled after a leather-cutting knife, as it was at the end of the 19th century. Over the years, as machine-made shoes steadily replaced the handcrafted ones, this knife found itself a new calling: food.
The handle is held with brass rivets for perfect balance, and carved from cocobolo wood, a tropical hardwood known for its durability even in humid environments.
The blade, made of 420HC High Carbon Stainless Steel, is hand-edged, honed and cryogenically treated to ensure a long lasting sharpness.
While most blades are eventually dulled by the acidity of lemons, the Cannon knife stands out as a flawless citrus-carving knife. Its precision allows for perfect twists of the zest without crushing out the precious oils.
Trade a handful of bar tools for this one versatile cocktail instrument; it notches, cuts, juices, easily removes seeds, and scrapes any trimmings off a counter. It's as efficient with vegetables as it is with fruits.
