The Gyuto is the standard chef knife among Japanese cutlery. Contrary to its American version, the Gyuto doesn't have a bolster at the junction of handle and blade. It also sports a thinner, harder blade large enough to do most of the kitchen work, making it a perfect tool for the seasoned cook.
Damascus 45 japanese knives are a beautiful, efficient and fair priced line of knives that will suit well to both the professional and the knife entusiast.
The core of the Damascus 45 knives is made of uddeholm swedish steel, a very high quality super steel that is hardened to 60 HRC. This core, which is in the dead center is in fact the edge of the blade. On each side of the hard center, you will find 45 layers of folded stainless steel, which includes a chrome steel (the shiny one) and a nickel alloy (the white-ish part). This blade will take a very sharp edge that will last a very long time compared to any western knives you have used in the past.
The handle is traditional wa-handle, made of magnolia and the ferrule (top part of the handle) is made of genuine buffalo horn. With time and use, the handle will develop a nice, dark honey patina.
Easy to sharpen (water stone only), rust resistant and very light, these knives are a very popular line with their traditional handle, great steel and beautiful blade.
