Verjuice is a product without alcohol, without maturation and without fermentation.
It comes from the pressing of immature grapes. Three grape varieties of blue grapes are used to create this verjuice. It does not contain any preservative. The only ingredient is grape juice! After opening, refrigerate it and consume it within two months, it can be frozen in small ice cube molds to increase its duration.
Thanks to its acidity, it can replace lemon or lime juice in cocktails. It is also excellent in soda (one part verjuice to five parts carbonated water). You can also use it in cooking to deglaze sauces or to marinate meats.
Au Fil du Vent is currently the only producer of grape verjuice in Quebec.
Au Fil du Vent is a family run business, who's farms are located in the grater Montreal area and are dedicated to organic cultivation of elderberries, blueberries and grapes. At present, they are also testing hop cultivation.
