This oyster shucker was designed in collaboration with Marco Pinchot of Taylor Shellfish Farms to specifically open Kumamoto and Shigoku oysters.
The blade has a short (1") four-sided eased edge grind that gently tapers to the flat unground blade. Incredibly effective when opening challenging small oysters, the Olympia will handle the larger East and West Coast varieties too.
The blade is made of 420HC High Carbon Stainless Steel, with a tough "Murphy Green" polypropylene plastic handle.
