This wonderful product is the result of the evaporation of sour apple juice that, like during the fabrication of maple syrup, has been cooked down to obtain a sweet and thick substance. To balance that natural sweetness, some malic acid was added to the syrup. There is therefore only one ingredient in the Surette : apples! It can be used with food, the same way balsamic vinegar would be, and in cocktails, as the necessary sweet and sour component.
