Eldertrees are indigenous to Quebec and they produce small berries in september.
Elderberries have a unique taste, somewhere between blackberries and wild grapes. The sour elderberry syrup is less sweet than simple syrup and thanks to its acidity, you may need less lemon or lime juice when mixing your cocktail.
Try this special syrup of deep violet colour in a Kir by simply stretching it with white wine, or as a lemonade by mixing it with sparkling water (one part of syrup, five parts of water).
Furthermore, this local product can also be used in the kitchen, in sauces or to marinate meat.
It makes a fantastic coulis for cake or ice cream.

Au Fil du Vent is a family run business, who's farms are located in the grater Montreal area and are dedicated to organic cultivation of elderberries, blueberries and grapes. At present, they are also testing hop cultivation.
